This recipe (can you call a two-ingredient concoction a 'recipe'?) was from this pin. All you need is yellow cake mix and a 15oz can of pumpkin.
Mix these two ingredients together. I figured, "Hey, why use the mixer for this? I'm a tough girl, I can mix this by hand. 'Cause I'm strong. And awesome. And super."
Please, use the hand mixer. Just trust me here.
Once it's all mixed up, it looks something like this. It's a pretty thick batter. That's why you should use the mixer.
I spooned it into some silicon muffin liners. Those things rock my socks. For realsies.
And then, bake at 350 degrees for about 20 minutes. Let those bad boys cool.
If I had it all to do over again, I probably would have smoothed out the batter before baking. They turned out a bit lumpy at the top, because the batter was so thick. 'Priscilla,' you're asking, 'how will you ever fix such a thing?'
Cream cheese icing. It is the answer to most questions in life.
I see you salivating. You don't have to hide that from me, not after all we've been through.
This recipe is so simple, it might not really be a 'recipe'. Try it. Don't forget the cream cheese icing. Comment after you're out of your deliciousness coma.
Oh, and FYI: I had to run out after I made these and in my 'mom-trying-to-do-eleven-hundred-things-at-once' mode, I didn't wrap these up. Those muffin/cupcake things were still soft and moist when I came back HOURS LATER. So yeah... those are some moist... mupcakes? Cuffins? Whatevs.
